Ingredients

  • 500 grams Pearl onions
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 2 tablespoons Granulated sugar
  • 2 tablespoons Balsamic vinegar
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 125 milliliters Water
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Bring a pot of water to boil. Add the pearl onions and blanch them for 2 minutes.

Step 2

Drain the onions and transfer them to a bowl of ice water to cool. Once cool, peel the skins off by pinching the root ends; the skins should slip off easily.

Step 3

In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and sizzling.

Step 4

Add the peeled onions to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to turn golden brown.

Step 5

Sprinkle the sugar over the onions and stir well to coat. Cook for 2 minutes, allowing the sugar to caramelize slightly.

Step 6

Pour in the balsamic vinegar and stir again to combine. Let it simmer for 1 minute for the flavors to meld.

Step 7

Season with salt and black pepper, then add the water to the skillet. Stir to deglaze the pan, loosening any caramelized bits from the bottom.

Step 8

Reduce the heat to low, cover the skillet, and simmer for 10-15 minutes, stirring occasionally, until the onions are tender and the liquid has reduced to a syrupy glaze.

Step 9

Taste and adjust seasoning if necessary. Optional: Garnish with chopped fresh parsley before serving.

Step 10

Serve warm as a side dish or topping for meats, salads, or roasted vegetables.
