Ingredients

  • 1 lb fresh green beans
  • 6 slices bacon
  • 1 medium yellow onion
  • 3 tbsp apple cider vinegar
  • 3 tbsp granulated sugar
  • 2 tbsp water
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper

Directions

Step 1

Rinse and trim the green beans, cutting off the ends. Set them aside.

Step 2

Dice the bacon into small pieces and place it in a large skillet over medium heat. Cook until the bacon is crispy, about 7-8 minutes. Remove the bacon with a slotted spoon and set it aside on a plate lined with paper towels. Leave the bacon grease in the skillet.

Step 3

Finely chop the yellow onion. Add it to the skillet with the bacon grease and sauté over medium heat until soft and translucent, about 5 minutes.

Step 4

While the onion is cooking, bring a pot of salted water to a boil. Add the green beans and cook for 4-5 minutes until they are tender but still crisp. Drain the green beans and set them aside.

Step 5

To the skillet with the sautéed onion, add the apple cider vinegar, granulated sugar, and water. Stir well and bring the mixture to a simmer. Let it cook for 2-3 minutes until the sugar dissolves, and the sauce slightly thickens.

Step 6

Add the drained green beans to the skillet, tossing them to coat evenly in the sweet and sour sauce. Season with salt and ground black pepper.

Step 7

Sprinkle the cooked bacon over the top of the green beans and toss lightly to combine.

Step 8

Transfer the sweet and sour green beans with bacon to a serving dish and enjoy warm.
