Ingredients

  • 3 medium-sized cucumbers
  • 1 large red bell pepper
  • 1 medium-sized red onion
  • 1 tablespoon salt
  • 1 cup white vinegar
  • 1 cup granulated sugar
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 0.5 teaspoon ground turmeric

Directions

Step 1

Wash and trim the ends off the cucumbers. Dice them into small, uniform pieces (approximately 1/4-inch cubes).

Step 2

Deseed and dice the red bell pepper into small pieces. Peel and finely dice the red onion.

Step 3

Place the diced cucumbers, bell pepper, and red onion in a large mixing bowl. Sprinkle the salt over the vegetables and toss to combine.

Step 4

Let the vegetables sit for 30 minutes to draw out excess moisture. After 30 minutes, drain the vegetables and press out any remaining liquid using a clean kitchen towel or paper towels.

Step 5

In a medium saucepan, combine the white vinegar, granulated sugar, mustard seeds, celery seeds, and ground turmeric. Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves completely.

Step 6

Reduce the heat to low and add the drained vegetables into the saucepan. Stir well to coat the vegetables in the vinegar mixture.

Step 7

Simmer the relish for 5-7 minutes, stirring occasionally, until the cucumbers have softened slightly and the mixture has thickened slightly.

Step 8

Remove the saucepan from heat and let the relish cool to room temperature.

Step 9

Transfer the relish into sterilized glass jars or an airtight container. Store in the refrigerator for up to 2 weeks.

Step 10

Serve as a condiment alongside your favorite dishes, and enjoy the sweet and tangy flavor contrast!
