Ingredients

  • 500 grams Chicken breast or pork loin (cubed)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Cornstarch
  • 2 tablespoons Vegetable oil
  • 1 medium Red bell pepper (diced)
  • 1 medium Green bell pepper (diced)
  • 1 cup Pineapple chunks (canned, drained, reserve juice)
  • 1 medium Onion (diced)
  • 1 cup Ketchup
  • 0.5 cup Brown sugar
  • 0.5 cup White vinegar
  • 2 tablespoons Soy sauce
  • 0.5 cup Pineapple juice (from the canned pineapple)
  • 1 tablespoon Cornstarch (for sauce thickening)
  • 2 tablespoons Water (for cornstarch slurry)

Directions

Step 1

Season the cubed chicken or pork with salt and pepper. Toss the meat in the cornstarch until evenly coated.

Step 2

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the coated meat and cook until golden and fully cooked through, about 5-7 minutes. Remove the meat from the skillet and set aside.

Step 3

In the same skillet, add the diced red and green bell peppers, onion, and pineapple chunks. Stir-fry for 3-4 minutes until the vegetables begin to soften.

Step 4

In a bowl, combine the ketchup, brown sugar, white vinegar, soy sauce, pineapple juice, and 0.5 cup water. Mix well to create the sauce.
