Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 2 large carrots, sliced
  • 6 cups beef broth
  • 15 ounces diced tomatoes, canned (with juice)
  • 2 tablespoons tomato paste
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks. Drain excess fat, if necessary.

Step 3

Add the diced onion and cook for 3-4 minutes, or until softened.

Step 4

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 5

Add the chopped cabbage and sliced carrots to the pot. Stir well to combine.

Step 6

Pour in the beef broth, diced tomatoes (with their juice), and tomato paste. Stir to incorporate the tomato paste into the liquid.

Step 7

Add the apple cider vinegar, brown sugar, salt, black pepper, dried thyme, and bay leaf. Bring the soup to a boil.

Step 8

Reduce the heat to low, cover the pot, and simmer for 30 minutes, stirring occasionally.

Step 9

Check the seasoning and adjust with additional salt or vinegar for more tanginess, if desired.

Step 10

Remove the bay leaf before serving.

Step 11

Ladle the soup into bowls and serve hot. Enjoy!
