  • 1 pound beef sirloin or flank steak
  • 3 tablespoons cornstarch
  • 3 tablespoons vegetable oil
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium yellow onion
  • 1 cup pineapple chunks (canned)
  • 1 cup pineapple juice (from can)
  • 0.33 cup ketchup
  • 2 tablespoons soy sauce
  • 0.25 cup rice vinegar
  • 3 tablespoons brown sugar
  • 3 cloves garlic
  • 1 teaspoon ginger
  • 0.25 cup water
  • 1 tablespoon sesame seeds
  • 2 stalks scallions

Directions

Step 1

Slice the beef into thin strips against the grain. Place the beef strips in a bowl and toss with 2 tablespoons of cornstarch until evenly coated. Set aside.

Step 2

Dice the red and green bell peppers into bite-sized pieces. Peel and slice the onion into wedges. Mince the garlic and grate the ginger.

Step 3

In a small bowl, whisk together the pineapple juice, ketchup, soy sauce, rice vinegar, brown sugar, 1 tablespoon of cornstarch, and water to make the sweet and sour sauce. Set aside.
