Ingredients

  • 500 grams Large shrimp, peeled and deveined
  • 400 grams White kidney beans (canned, drained, and rinsed)
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 2 tablespoons Honey
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lemon juice
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 2

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned.

Step 3

Add the shrimp to the skillet and sprinkle with paprika, salt, and black pepper. Cook for 2-3 minutes on one side, then flip and cook for another 2 minutes until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium and add the honey, soy sauce, and lemon juice. Stir well to combine, letting the sauce simmer for 1-2 minutes.

Add the white kidney beans to the skillet and gently toss to coat them in the sauce. Cook for another 3-4 minutes to heat the beans through.
