Ingredients

  • 4 pieces beets (medium, peeled and cubed)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 piece orange (zested and juiced)
  • 1 piece fennel bulb (small, diced)
  • 1 piece red onion (small, finely chopped)
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons parsley (fresh, chopped)
  • 0.25 cup water

Directions

Step 1

Peel and cube the beets into bite-sized pieces, about 1/2 to 1-inch cubes.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Step 3

Add the cubed beets to the skillet. Sprinkle with salt and black pepper. Sauté for about 5-7 minutes, stirring occasionally, until they start to soften.

Add 1/4 cup of water to the skillet, then reduce the heat to low and cover with a lid. Let the beets steam for 15-20 minutes, stirring occasionally, until tender. Remove from heat and set aside.
