Ingredients

  • 240 ml Whole milk
  • 85 grams Unsalted butter
  • 100 grams Granulated sugar
  • 2.25 teaspoons Active dry yeast
  • 450 grams All-purpose flour
  • 1 teaspoon Salt
  • 2 Large eggs
  • 2 teaspoons Ground cinnamon
  • 120 grams Brown sugar
  • 120 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Heavy cream

Directions

Step 1

In a small saucepan, heat the milk over medium heat until warm to the touch (about 38°C). Remove from heat and add 57 grams of the butter, stirring until melted. Stir in 1 tablespoon of granulated sugar and let the mixture cool slightly.

Step 2

Sprinkle the active dry yeast over the warm milk mixture and let it sit for 5-10 minutes until foamy.

Step 3

In a large mixing bowl, combine 400 grams of flour, remaining granulated sugar, and salt. Add the milk-yeast mixture and mix until partially combined.

Add the eggs and mix well. Gradually add the remaining flour, a little at a time, until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Step 5

Transfer the dough to a greased bowl, cover with a damp towel, and let it rise for 1 hour or until doubled in size.

Step 6

In a small bowl, mix the brown sugar and ground cinnamon to create the filling. Melt the remaining butter (28 grams) and set aside.

Once the dough has risen, punch it down and roll it out on a floured surface into a 40cm x 25cm rectangle.

Brush the melted butter over the dough, then sprinkle the cinnamon-sugar mixture evenly on top.

Starting from one of the long edges, roll the dough tightly into a log. Slice the log into 12 even pieces and place them in a greased 9x13-inch baking pan, leaving a bit of space between each roll.

Cover the pan with a damp towel and let the rolls rise for another 30-45 minutes until puffy.

Preheat your oven to 175°C (350°F). Bake the rolls for 20-25 minutes, or until golden brown.

Step 12

While the rolls are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, vanilla extract, and heavy cream until smooth.

Step 13

Once the rolls are done baking, let them cool slightly before drizzling the glaze over the top. Serve warm and enjoy!
