Directions

Step 1

Begin by peeling the pumpkin and removing all seeds. Cut the pumpkin into bite-sized cubes, about 1-inch in size.

In a large saucepan, combine the granulated sugar, white vinegar, water, ground cinnamon, whole cloves, fresh ginger, and salt. Stir well and bring the mixture to a simmer over medium heat.
