Ingredients

  • 4 medium sweet potatoes
  • 0.5 cup raisins
  • 3 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup water
  • 0.5 teaspoon vanilla extract
  • 0.25 cup chopped pecans (optional)

Directions

Step 1

Peel the sweet potatoes and cut them into evenly sized 1-inch cubes.

Step 2

Place the sweet potato cubes in a large pot and cover them with water. Bring to a boil over medium-high heat and cook for 10-12 minutes, or until just fork-tender. Drain the potatoes and set aside.

Step 3

While the sweet potatoes are cooking, place the raisins in a small bowl and cover them with hot water. Let them soak for 5-10 minutes to plump up, then drain the water.

Step 4

In a large skillet or sauté pan, melt the butter over medium heat. Once melted, add the brown sugar, ground cinnamon, and salt, stirring until the mixture is smooth and bubbly.

Step 5

Add the drained sweet potato cubes to the skillet, gently tossing to coat them in the buttery cinnamon-sugar mixture.

Step 6

Sprinkle the plumped raisins over the sweet potatoes and pour in the 1/4 cup of water. Cook for another 5-7 minutes, stirring occasionally, until the sweet potatoes are tender and the sauce has thickened slightly.

Step 7

Stir in the vanilla extract, and if desired, sprinkle the chopped pecans over the top for a bit of crunch.

Step 8

Serve warm as a side dish, and enjoy the cozy, sweet flavors!
