  • 4 medium (about 2 lbs total) Sweet potatoes
  • 1 cup Heavy cream
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Salt
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar
  • 0.25 teaspoons Grated nutmeg

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 2-quart baking dish and set it aside.

Step 2

Peel the sweet potatoes and cut them into large chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes, or until the sweet potatoes are fork-tender. Drain and transfer to a large mixing bowl.

Mash the sweet potatoes until smooth. Add 3 tablespoons of the butter, granulated sugar, ground cinnamon, and salt. Stir to combine.
