Ingredients

  • 4 medium (about 2 lbs total) sweet potatoes
  • 2 cups (fresh or canned, drained if canned) pineapple chunks
  • 3 tablespoons brown sugar
  • 3 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 cups orange juice
  • 1 teaspoon vanilla extract
  • 0.25 teaspoons salt
  • 0.5 cups, chopped pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the sweet potatoes and cut them into 1-inch cubes.

Step 3

Bring a large pot of water to a boil, and add the sweet potato cubes. Cook for 8-10 minutes, or until they are just tender. Drain and set aside.

Step 4

In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, cinnamon, nutmeg, orange juice, vanilla extract, and salt to create a glaze.

Step 5

Add the parboiled sweet potatoes to a large mixing bowl. Pour the glaze over the sweet potatoes and gently toss to coat.

Step 6

In a greased 9x13-inch baking dish, spread half of the sweet potatoes in an even layer. Top with 1 cup of pineapple chunks.

Step 7

Add the remaining sweet potatoes on top, followed by the remaining pineapple chunks. If using pecans, sprinkle them evenly over the top.

Step 8

Cover the dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes.

Step 9

Remove the aluminum foil and bake for an additional 10-15 minutes, or until the sweet potatoes are caramelized and the pineapple is slightly golden.

Step 10

Remove from the oven, let cool for 5 minutes, and serve warm. Enjoy your Sweet Potato with Pineapple Aloha!
