Ingredients

  • 1 large sweet potato
  • 2 cans (5 oz each) canned tuna
  • 1 large egg
  • 0.5 cup breadcrumbs
  • 2 stalks green onion
  • 2 tablespoons parsley
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Peel and cube the sweet potato, then boil it in a pot of water until fork-tender, about 10-12 minutes. Drain and mash the sweet potato in a large mixing bowl. Let it cool slightly.

Step 2

Drain the canned tuna and add it to the bowl with the mashed sweet potato. Flake the tuna with a fork to break it apart.

Step 3

Add the egg, breadcrumbs, chopped green onion, chopped parsley, paprika, garlic powder, salt, and black pepper to the bowl. Mix everything together until well combined.

Step 4

Divide the mixture into 8 equal portions and shape each portion into a small patty about ½ inch thick.

Step 5

Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the patties in batches, making sure not to overcrowd the pan.

Step 6

Cook the patties for 3-4 minutes on each side until golden brown and heated through.

Step 7

Transfer the cooked patties to a plate lined with paper towels to absorb any excess oil.

Step 8

Serve the Sweet Potato Tuna Patties warm with a side of salad, yogurt dipping sauce, or your favorite condiments.
