Ingredients

  • 1 large sweet potato
  • 2 cans (5 oz each), drained canned tuna
  • 1 large egg
  • 1 cup breadcrumbs
  • 0.5 medium, finely diced red onion
  • 2 tablespoons, chopped parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon (for greasing the baking sheet) olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C). Lightly grease a baking sheet with olive oil or line it with parchment paper.

Step 2

Peel the sweet potato, chop it into chunks, and boil in a pot of water until fork-tender, approximately 10–12 minutes. Drain and mash until smooth. Let it cool slightly.

Step 3

In a large mixing bowl, combine the mashed sweet potato, drained tuna, egg, breadcrumbs, red onion, parsley, garlic powder, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Step 4

Using your hands, shape the mixture into small balls, about 1.5 inches in diameter. Place the balls onto the prepared baking sheet, leaving a little space between each.
