  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Peel and dice the sweet potatoes into 1/2-inch cubes.

Toss the sweet potatoes with 1 tablespoon of olive oil and spread them evenly on a baking sheet.
