  • 2 large Egg yolks
  • 2 large Egg whites
  • 1 tablespoons Granulated sugar
  • 1 as needed Cooking spray or butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease two 8-ounce ramekins with cooking spray or butter, ensuring the sides are well-coated.

Step 2

Pierce the sweet potato several times with a fork and microwave it on high for 5-6 minutes, or until tender. Let it cool slightly, then peel and mash it until smooth.
