Ingredients

  • 500 grams Sweet potatoes
  • 1 large Egg
  • 2 tablespoons All-purpose flour
  • 2 stalks Green onions (finely sliced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 0.5 teaspoon Smoked paprika
  • 3 tablespoons Olive oil

Directions

Step 1

Peel and coarsely grate the sweet potatoes using a box grater. Place the grated sweet potatoes in a large mixing bowl.

Step 2

Using a clean kitchen towel or muslin cloth, wrap the grated sweet potatoes and squeeze out as much liquid as possible. Discard the liquid and return the sweet potatoes to the bowl.

Step 3

Add the egg, flour, finely sliced green onions, salt, black pepper, and smoked paprika to the bowl. Mix well to combine all the ingredients into a cohesive mixture.

Heat a non-stick frying pan over medium heat and add 1 tablespoon of olive oil.

Take small handfuls of the sweet potato mixture (approximately 3 tablespoons per rosti) and shape them into flat discs. Place them in the hot pan, leaving some space between each rosti.
