Ingredients

  • 1 cup sweet potato (mashed)
  • 0.25 cup warm water (around 110°F)
  • 2.25 teaspoons active dry yeast
  • 4 tablespoons unsalted butter (softened)
  • 2 tablespoons honey
  • 1 egg
  • 3.5 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons milk (for brushing)

Directions

Step 1

Peel and cube one or two medium-sized sweet potatoes. Boil them in a pot of water until fork-tender, about 15 minutes. Drain, mash until smooth, and measure out 1 cup. Let it cool to room temperature.

Step 2

In a small bowl, combine the warm water and active dry yeast. Stir and let it sit for 5–10 minutes until foamy.

In a large mixing bowl, combine mashed sweet potato, softened butter, honey, and the egg. Mix until smooth.

Add the yeast mixture to the mixing bowl and stir to combine.

Gradually add the all-purpose flour and salt to the mixture. Start by adding 2 cups of flour, mix with a spoon or stand mixer with a dough hook, then slowly incorporate the remaining flour until a smooth and slightly sticky dough forms.

Knead the dough for about 8–10 minutes by hand on a floured surface or 5 minutes in a stand mixer until it is soft and pliable.
