  • 0.25 cups Baking soda
  • 4 cups Water (for baking soda bath)
  • 1 unit Egg (beaten)

Directions

Step 1

Peel and cube one medium sweet potato, steam or boil until tender, then mash until smooth. Measure out 1 cup of mashed sweet potato and set aside to cool.

In a large mixing bowl, combine the warm water, instant yeast, and brown sugar. Stir gently and let sit for 5 minutes until the mixture becomes foamy.

Add the mashed sweet potato, salt, and 2 cups of all-purpose flour to the yeast mixture. Stir until combined.
