Ingredients

  • 2 large sweet potatoes
  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 2 large eggs
  • 0.5 cup evaporated milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 pre-made or homemade 9-inch pie crust

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Peel and dice the sweet potatoes, then boil them in a large pot of water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

Step 3

In a large mixing bowl, mash the cooked sweet potatoes until smooth.

Step 4

Add the butter to the mashed sweet potatoes while they are still warm, and mix until fully melted and incorporated.

Step 5

Stir in granulated sugar, brown sugar, eggs, evaporated milk, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix thoroughly until smooth and well combined.

Step 6

Pour the sweet potato mixture into the prepared 9-inch pie crust.

Step 7

Place the pie on the middle rack of the preheated oven and bake for 55-60 minutes, or until the filling is set and a knife inserted into the center comes out clean.

Step 8

Remove the pie from the oven and let it cool on a wire rack for at least 1 hour before serving.

Step 9

Serve the pie warm or at room temperature. Top with whipped cream or a scoop of vanilla ice cream if desired.
