Ingredients

  • 1 cup Sweet potato (cooked and mashed)
  • 1 cup All-purpose flour
  • 0.75 cup Milk
  • 1 large Egg
  • 2 tablespoons Unsalted butter (melted)
  • 1.5 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 tablespoons Sugar
  • 2 tablespoons Vegetable oil or additional butter (for greasing the pan)
  • 0 optional Maple syrup (for serving)

Directions

Step 1

In a large mixing bowl, combine the mashed sweet potato, milk, egg, and melted butter. Whisk until smooth and well combined.

Step 2

In a separate bowl, whisk together the flour, baking powder, sugar, cinnamon, nutmeg, and salt.

Step 3

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly grease with vegetable oil or butter.

Step 5

Scoop 1/4 cup of batter onto the skillet for each pancake. Spread the batter gently if needed to even out the thickness.

Step 6

Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancakes with a spatula and cook for an additional 2-3 minutes, or until golden brown and cooked through.

Step 7

Repeat with the remaining batter, greasing the skillet as needed.

Step 8

Serve the pancakes warm with maple syrup, butter, or your favorite toppings.
