Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoons unsalted butter
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 24 pieces mini marshmallows
  • 0.5 cup all-purpose flour
  • 1 large egg
  • 2 tablespoons milk
  • 1 cup panko breadcrumbs
  • 3 cups vegetable oil

Directions

Step 1

Peel and cube the sweet potatoes into 1-inch pieces.

Step 2

Boil the sweet potato cubes in a large pot of salted water for 15 minutes, or until fork-tender. Drain and set aside.

Step 3

Using a potato masher or fork, mash the sweet potatoes until smooth. Stir in the butter, brown sugar, cinnamon, nutmeg, vanilla extract, and salt until fully combined. Let the mixture cool to room temperature.

Take a spoonful of the sweet potato mixture and flatten it into a small disc. Place a mini marshmallow in the center, then wrap the sweet potato mixture around it to form a ball. Repeat until all the sweet potato mixture is used (approximately 24 balls).

In three separate bowls, set up the breading station. Add flour to the first bowl. In the second bowl, whisk together the egg and milk. In the third bowl, add the panko breadcrumbs.
