Ingredients

  • 2 lbs Sweet potatoes
  • 2 cups Heavy cream
  • 2 pieces Garlic cloves
  • 1 tbsp Fresh thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Gruyère cheese
  • 0.5 cup Parmesan cheese
  • 1 tbsp Unsalted butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with the unsalted butter.

Step 2

Peel the sweet potatoes and slice them thinly into rounds, approximately 1/8-inch thick. Use a mandoline slicer for consistent slices, if available.

Step 3

In a medium saucepan, combine the heavy cream, minced garlic, thyme, salt, and black pepper. Heat over medium-low heat and bring just to a simmer. Turn off the heat and set aside for the flavors to infuse.

Step 4

Layer one-third of the sweet potato slices in the prepared baking dish, slightly overlapping the slices. Sprinkle one-third of the Gruyère cheese and one-third of the Parmesan cheese evenly over the layer.

Step 5

Repeat the layering process two more times, finishing with a cheese layer on top.

Step 6

Pour the infused cream mixture evenly over the sweet potatoes, ensuring it seeps through all the layers.

Step 7

Cover the baking dish tightly with foil and bake in the preheated oven for 30 minutes.

Step 8

Remove the foil and continue to bake for an additional 15 minutes, or until the sweet potatoes are tender and the top is golden brown and bubbly.

Step 9

Let the gratin rest for 5-10 minutes before serving. Garnish with additional thyme if desired.
