Ingredients

  • 2 medium sweet potato
  • 1.5 cups all-purpose flour
  • 0.5 teaspoons salt
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons freshly grated nutmeg
  • 4 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 0.25 cups milk
  • 4 cups water
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Peel and dice the sweet potatoes into 1-inch chunks.

Step 2

Bring a medium pot of water to boil, add the diced sweet potatoes, and cook for 10-12 minutes or until fork-tender. Drain and let them cool slightly.

Step 3

Mash the sweet potatoes with a fork or potato masher until smooth. Set aside to cool completely.

Step 4

In a large mixing bowl, combine the mashed sweet potatoes, flour, salt, ground cinnamon, and freshly grated nutmeg. Mix until a soft dough forms. Add more flour if the dough is too sticky.

Step 5

Lightly flour a clean surface and divide the dough into 4 equal portions. Roll each portion into a log approximately 1/2 inch thick, then cut into 1-inch pieces to form the dumplings.

Step 6

Bring 4 cups of water to a gentle boil in a large pot. Working in batches, drop the dumplings into the boiling water and cook for 3-4 minutes. The dumplings will float to the top when done. Remove with a slotted spoon and set aside.

Step 7

In a large skillet, melt the butter over medium heat. Stir in brown sugar and milk, cooking until the sugar dissolves and the mixture thickens slightly, about 2-3 minutes.

Step 8

Add the cooked dumplings to the skillet and toss gently to coat in the butter-sugar mixture. Cook for an additional 2 minutes to allow the flavors to meld.

Step 9

Drizzle the maple syrup over the dumplings and toss again to distribute evenly.

Step 10

Serve warm, garnished with fresh parsley if desired.
