  • 1 cup Sweet potato (roasted and mashed)
  • 2.5 cups All-purpose flour

  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 0.75 cup Whole milk
  • 4 tablespoons Unsalted butter (melted)
  • 1 teaspoon Vanilla extract
  • 4 cups Oil (for frying)
  • 1 cup Powdered sugar (for glaze)
  • 2 tablespoons Milk (for glaze)
  • 0.5 teaspoon Vanilla extract (for glaze)

Directions

Step 1

Roast a medium-sized sweet potato until tender, about 45–60 minutes at 400°F, then mash it until smooth. Allow it to cool to room temperature.

Step 2

In a large bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 3

In a separate bowl, whisk together the mashed sweet potato, eggs, milk, melted butter, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients, mixing until a sticky dough forms. Be careful not to overmix.

Turn the dough out onto a lightly floured surface and gently knead until it comes together. Roll it out to about 1/2-inch thickness.
