  • 4 ounces cream cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks green onions (optional, for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Peel the sweet potatoes and cut them into small chunks.

Step 3

Place the sweet potato chunks on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and toss to coat evenly.

Step 4

Roast the sweet potatoes in the oven for 25-30 minutes, or until tender and slightly caramelized. Remove from the oven and let cool slightly.
