  • 2 large Eggs
  • 0.75 cup All-purpose flour
  • 0.5 cup Rolled oats
  • 0.5 cup Chopped pecans (optional)
  • 1 teaspoon Salt (divided)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.

Step 2

Peel the sweet potatoes, cut them into chunks, and boil in a large pot of water for about 15 minutes or until they are very tender. Drain and transfer the sweet potatoes to a large mixing bowl.
