Ingredients

  • 2 medium Sweet potatoes
  • 8 oz Cream cheese, softened
  • 1 cup Cheddar cheese, shredded
  • 1 tsp Garlic powder
  • 0.5 tsp Smoked paprika
  • 2 stalks Green onions, finely chopped
  • 2 tbsp Parsley, finely chopped
  • 1 cup Pecans or walnuts, finely chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce them several times with a fork.

Step 2

Place the sweet potatoes on a baking sheet and bake for 25 minutes, or until soft and fully cooked through. Allow them to cool slightly.

Step 3

Once cooled, peel the sweet potatoes and place the flesh in a large mixing bowl. Mash the sweet potatoes with a fork or potato masher until smooth.

Add the softened cream cheese, shredded cheddar cheese, garlic powder, smoked paprika, salt, and black pepper to the sweet potato mash. Mix everything together until well combined and smooth.
