Ingredients

  • 4 large Sweet potatoes
  • 6 tablespoons Unsalted butter
  • 1 cup Granulated sugar
  • 1 cup Milk
  • 2 teaspoons Vanilla extract
  • 2 large Eggs
  • 1 cup All-purpose flour
  • 1 cup Brown sugar
  • 6 tablespoons Unsalted butter (for topping)
  • 1 teaspoon Ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with butter or non-stick spray.

Step 2

Peel the sweet potatoes and cut them into large chunks. Place them into a large pot of water and bring to a boil. Cook for 15-20 minutes or until the potatoes are fork-tender.

Step 3

Drain the sweet potatoes and transfer them to a large mixing bowl. Mash them until smooth using a potato masher or hand mixer.

Step 4

To the mashed sweet potatoes, add 6 tablespoons of unsalted butter, granulated sugar, milk, vanilla extract, and eggs. Mix until fully combined and smooth.

Step 5

Pour the sweet potato mixture into the prepared baking dish and smooth out the top with a spatula.

Step 6

In a medium bowl, prepare the streusel topping by combining the flour, brown sugar, 6 tablespoons of unsalted butter (softened), and ground cinnamon. Use a fork or your fingers to mix until crumbly.

Step 7

Evenly sprinkle the streusel topping over the sweet potato layer in the baking dish.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and slightly crisp.

Step 9

Remove from the oven and allow the casserole to rest for 5 minutes. Serve warm and enjoy!
