Ingredients

  • 2 medium Sweet potatoes
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 2 stalks Green onions
  • 2 cloves Garlic
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 tablespoons Olive oil

Directions

Step 1

Peel the sweet potatoes and grate them into a large mixing bowl using a box grater.

Finely chop the green onions and mince the garlic cloves, then add them to the grated sweet potatoes.

Step 3

In a small bowl, whisk the eggs and pour them into the sweet potato mixture.

Add the flour, paprika, salt, and black pepper to the bowl, then mix well to combine all the ingredients.

Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
