  • 420 grams All-purpose flour
  • 7 grams Salt
  • 1 large Egg (for egg wash)
  • 15 ml Water (for egg wash)
  • 10 grams Sesame seeds (optional)

Directions

Step 1

Peel, cube, and steam or boil sweet potatoes until tender. Mash them into a smooth puree and let cool to room temperature.

Step 2

In a small bowl, mix the warm milk, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.

Step 3

In a large mixing bowl, combine the mashed sweet potatoes, yeast mixture, softened butter, egg, and salt.

Gradually add the flour, 1 cup at a time, mixing until a soft, slightly sticky dough forms.
