  • 2 large eggs

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.

Pierce the sweet potatoes with a fork and microwave them on high for about 8-10 minutes or until completely tender. Alternatively, you can bake them in the oven at 400°F (200°C) for about 45 minutes to an hour.
