Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 4 cups chicken or vegetable stock
  • 1 cup coconut milk
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons optional garnish: chopped fresh parsley
  • 2 tablespoons optional garnish: toasted pepitas (pumpkin seeds)

Directions

Step 1

Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes. Pierce them with a fork a few times, place them on a baking sheet, and roast for 40-50 minutes, or until they are tender when pierced with a knife. Allow them to cool slightly, then peel and set aside.

Step 2

While the sweet potatoes are roasting, heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-6 minutes, or until translucent.

Add the minced garlic to the pot and sauté for another minute, stirring constantly to avoid burning.
