Ingredients

  • 2 medium (about 1.5 lbs) sweet potatoes
  • 2 large Asian pears

  • 4 cups vegetable broth
  • 1 medium (diced) yellow onion
  • 2 cloves (minced) garlic
  • 1 tablespoon (grated) ginger
  • 1 tablespoon olive oil
  • 0.5 teaspoons ground cinnamon
  • 0.5 teaspoons ground turmeric
  • 0.5 teaspoons (or to taste) salt
  • 0.25 teaspoons (or to taste) black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons (chopped, for garnish) cilantro
  • 2 tablespoons (for garnish, optional) toasted coconut flakes

Directions

Step 1

Peel and dice the sweet potatoes and Asian pears into roughly 1-inch chunks. Set aside.

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 3–4 minutes until soft and translucent.

Stir in the garlic and ginger, cooking for another 1 minute until fragrant.
