  • 0.25 teaspoon salt
  • 1 large egg
  • 0.5 cup milk
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped nuts (optional)
  • 0.5 cup raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the cups lightly.

In a large mixing bowl, whisk together the mashed sweet potato, shredded apple, granulated sugar, brown sugar, egg, milk, vegetable oil, and vanilla extract until smooth.
