  • 0.25 teaspoon onion powder
  • 1 cup cheddar cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and dice the sweet potato into small cubes, approximately 1/2 inch in size.

Step 3

Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium heat. Add the sweet potato cubes and cook for 8-10 minutes, stirring occasionally, until they are fork-tender and slightly golden.

Add the remaining 1 tablespoon of olive oil to the skillet, followed by the baby spinach. Cook for 2-3 minutes or until the spinach is wilted. Remove the skillet from heat and set aside.
