Ingredients

  • 4 medium (about 1.5 lbs) sweet potatoes
  • 2 large ripe mangoes
  • 2 tablespoons unsalted butter
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 1 tablespoon lime juice
  • 0.25 cup chopped pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with butter or non-stick cooking spray.

Step 2

Peel the sweet potatoes and cut them into thin rounds, about 1/4-inch thick. Arrange them in a single overlapping layer in the prepared baking dish.

Step 3

Peel the mangoes and slice the flesh away from the pits. Cut the mango into thin slices and layer them evenly over the sweet potato slices.

Step 4

In a small saucepan, melt the butter over low heat. Stir in the brown sugar, cinnamon, nutmeg, and salt until fully combined.

Step 5

Remove the butter mixture from heat and stir in the lime juice. Drizzle this mixture evenly over the sweet potatoes and mangoes.

Step 6

Optional: Sprinkle chopped pecans over the top for added crunch and nutty flavor.

Step 7

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 8

Remove the foil and continue baking for an additional 20 minutes, or until the sweet potatoes are tender and the top is golden and caramelized.

Step 9

Let the dish cool for 5-10 minutes before serving. This dish is excellent as a side or even a light dessert!
