Ingredients

  • 1 large (about 2 cups grated) sweet potato
  • 1 cup (fresh, frozen, or canned) sweet corn kernels
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 2 stalks (finely chopped) green onions
  • 2 tablespoons (finely chopped) fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 0.25 cup (for frying) vegetable or canola oil

Directions

Step 1

Peel and grate the sweet potato using a box grater. Place the grated sweet potato in a clean kitchen towel and squeeze out any excess moisture.

Step 2

In a large mixing bowl, combine the grated sweet potato, corn kernels, all-purpose flour, eggs, chopped green onions, chopped parsley, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Mix well until the mixture holds together.

Step 3

In a large skillet, heat the vegetable oil over medium heat.

Step 4

Scoop approximately 2 tablespoons of the sweet potato mixture, form it into a patty, and carefully place it into the hot oil. Repeat with the remaining mixture, being careful not to overcrowd the skillet.

Step 5

Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to avoid burning.

Step 6

Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.

Step 7

Serve the fritters hot with your favorite dipping sauce, sour cream, or a fresh green salad. Enjoy!
