Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 can (15 oz) black beans
  • 1 tablespoon lime juice
  • 2 cloves garlic
  • 4 large tortillas
  • 1 large avocado
  • 0.25 cup fresh cilantro
  • 0.5 cup salsa
  • 1 cup shredded lettuce

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Peel and dice the sweet potatoes into 1/2-inch cubes.

Step 3

Toss the sweet potato cubes with 1 tablespoon of olive oil, cumin, chili powder, and 1/2 teaspoon of salt. Spread them onto a baking sheet in a single layer.

Step 4

Roast the sweet potatoes in the preheated oven for 20-25 minutes, stirring halfway through, until they are tender and slightly caramelized.

While the sweet potatoes roast, drain and rinse the black beans.

In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Mince the garlic and sauté it for 1-2 minutes until fragrant.
