Ingredients

  • 6 small (or 2 large) Cucumbers
  • 2 cups White vinegar
  • 1.5 cups Granulated sugar
  • 1 cup Water
  • 1 tablespoon Kosher salt
  • 2 teaspoons Mustard seeds
  • 1 teaspoon Celery seeds
  • 0.5 teaspoon Ground turmeric
  • 1 medium, sliced thinly Yellow onion

Directions

Step 1

Wash the cucumbers thoroughly and slice them into thin rounds (about 1/4 inch thick). Set aside.

Step 2

In a medium saucepan, combine the white vinegar, granulated sugar, water, kosher salt, mustard seeds, celery seeds, and ground turmeric.

Step 3

Place the saucepan over medium heat and stir until the sugar and salt dissolve completely. Bring the mixture to a gentle simmer and let it cook for 1-2 minutes to blend the flavors.

Step 4

Remove the pickling liquid from the heat and set it aside to cool slightly, about 5 minutes.

Step 5

In a clean, sterilized glass jar (or several jars), layer the cucumber slices and thinly sliced onion.

Step 6

Carefully pour the warm pickling liquid over the cucumbers and onions, ensuring all the vegetables are completely submerged.

Step 7

Seal the jars with lids and let them cool to room temperature. Once cooled, transfer the jar(s) to the refrigerator.

Step 8

Allow the pickles to marinate in the refrigerator for at least 24 hours before serving, although they taste even better after 2-3 days.

Step 9

Store the pickles in the fridge for up to 1 month. Enjoy!
