Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 4 cups vegetable stock
  • 4 cups fresh or frozen sweet peas
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint leaves, chopped
  • 0.5 cups heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 1 loaf crusty bread or croutons (optional, for serving)

Directions

Step 1

In a large pot, melt the butter over medium heat.

Step 2

Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until the onion becomes soft and translucent.

Step 3

Add the minced garlic and cook for an additional 1 minute, stirring to prevent burning.

Step 4

Pour in the vegetable stock and bring it to a gentle boil.

Step 5

Add the sweet peas, parsley, and mint to the pot. Reduce the heat to medium-low and let simmer for 10 minutes.

Step 6

Using an immersion blender (or working in batches with a countertop blender), carefully puree the soup until smooth. If using a countertop blender, return the pureed soup to the pot.

Step 7

Stir in the heavy cream, salt, black pepper, and lemon juice. Taste and adjust seasoning if needed.

Step 8

Heat the soup gently for another 2-3 minutes, but do not let it boil.

Step 9

Serve hot with crusty bread or croutons, if desired.
