  • 3 large sweet onions
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour

  • 4 large eggs, separated
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.25 tsp nutmeg, freshly grated

Directions

Step 1

Preheat your oven to 375°F (190°C). Butter a 1.5-quart soufflé dish and lightly dust the inside with grated Parmesan cheese. Set aside.

Step 2

Peel and thinly slice the sweet onions. In a large skillet, heat 2 tablespoons of butter over medium heat. Add the onions and cook slowly, stirring occasionally, until the onions are deeply caramelized, about 20 minutes. Remove from heat and set aside.

In a medium saucepan, melt the remaining 1 tablespoon of butter over medium heat. Stir in the flour and cook for 1-2 minutes, stirring constantly, to make a roux.
