Ingredients

  • 2 medium Sweet onions
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 3 tablespoons Granulated sugar
  • 2 large Eggs
  • 1 cup Buttermilk
  • 0.5 cup Shredded Parmesan cheese
  • 1 teaspoon Fresh thyme leaves (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Peel and finely dice the sweet onions.

Step 3

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the diced onions and cook, stirring occasionally, for 10-15 minutes or until the onions are caramelized and golden brown. Remove from heat and let cool slightly.
