  • 6 large russet potatoes
  • 2 large sweet onions
  • 6 tablespoons unsalted butter
  • 1 cup milk
  • 0.5 cup heavy cream
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 cup grated Parmesan cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Peel and dice the russet potatoes into even-sized chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes, or until fork-tender.

Step 2

While the potatoes cook, peel and thinly slice the sweet onions. Heat the olive oil in a skillet over medium heat. Add the onions and a pinch of salt, cooking them slowly for 15-20 minutes until golden and caramelized. Set aside.

Step 3

Drain the cooked potatoes and return them to the pot. Add 4 tablespoons of butter, the milk, and the heavy cream. Mash until smooth and creamy. Stir in 1 teaspoon of salt, the black pepper, and garlic powder. Taste and adjust seasonings if needed.
