Ingredients

  • 2 lbs Pork ribs
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Vegetable oil
  • 3 units Garlic cloves, minced
  • 0.5 cup Ketchup
  • 0.25 cup Rice vinegar
  • 0.25 cup Brown sugar
  • 2 tbsp Soy sauce
  • 0.5 cup Pineapple juice
  • 1 tbsp Cornstarch
  • 2 tbsp Water
  • 2 units Green onions, chopped (optional, for garnish)
  • 1 tbsp Sesame seeds (optional, for garnish)

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Cut the pork ribs into smaller sections, about 2-3 ribs each, and pat them dry with paper towels.

Step 3

Season the ribs with salt and black pepper on both sides.

Step 4

In a large skillet, heat the vegetable oil over medium-high heat. Sear the ribs on all sides until browned, about 2-3 minutes per side. Work in batches if necessary.

Step 5

Transfer the seared ribs to a baking dish in a single layer.

Step 6

In the same skillet, sauté the minced garlic until fragrant, about 30 seconds.

Step 7

Add the ketchup, rice vinegar, brown sugar, soy sauce, and pineapple juice to the skillet. Stir well and bring the mixture to a simmer for 2-3 minutes.

Step 8

Pour the sauce evenly over the ribs in the baking dish, ensuring they are well coated.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

Step 10

While the ribs are baking, mix the cornstarch and water in a small bowl to create a slurry.

Step 11

After 45 minutes, remove the foil from the ribs and carefully pour the sauce from the baking dish into a saucepan.

Step 12

Bring the sauce to a simmer on the stovetop and whisk in the cornstarch slurry. Cook for 2-3 minutes until the sauce thickens.

Step 13

Brush the thickened sauce over the ribs evenly, then return the ribs to the oven uncovered. Bake for another 15 minutes for a glossy finish.

Step 14

Remove the ribs from the oven and let them rest for 5 minutes.

Step 15

Garnish with chopped green onions and sesame seeds if desired. Serve warm with rice or noodles for a complete meal.
