Ingredients

  • 1 lb ground beef
  • 0.5 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 bell peppers (assorted colors, diced)
  • 1 cup pineapple chunks (canned, drained)
  • 2 tbsp vegetable oil
  • 0.5 cup ketchup
  • 2 tbsp white vinegar
  • 1 tbsp soy sauce
  • 3 tbsp brown sugar
  • 1 tbsp cornstarch
  • 0.25 cup water

Directions

Step 1

In a mixing bowl, combine ground beef, breadcrumbs, egg, garlic powder, salt, and black pepper. Mix until just combined.

Step 2

Form the mixture into 1-inch meatballs and set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the meatballs and cook for 5-6 minutes, turning frequently, until browned on all sides. Remove the meatballs and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the diced bell peppers and cook for 3-4 minutes until slightly softened.
