Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 pieces garlic cloves, minced
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the chicken thighs dry with a paper towel and season both sides generously with salt and black pepper.

Step 3

In a small bowl, combine Dijon mustard, whole-grain mustard, honey, olive oil, minced garlic, apple cider vinegar, smoked paprika, and a pinch of black pepper. Mix until smooth.

Step 4

Place the chicken thighs, skin-side up, in a baking dish or a cast-iron skillet. Spoon the mustard mixture over the chicken, ensuring each piece is evenly coated.

Step 5

Bake in the preheated oven for 35-40 minutes, or until the skin is golden and crispy and the internal temperature of the chicken reaches 165°F (74°C).

Step 6

For extra caramelization, turn on the broiler for the last 2-3 minutes of cooking, but keep a close eye to avoid burning the glaze.

Step 7

Remove the chicken from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving.

Step 8

Serve with your choice of side dishes, such as roasted vegetables, mashed potatoes, or steamed rice.
