Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 2 tablespoons Sugar
  • 2 large Eggs
  • 1.5 cups Sweet milk (whole milk)
  • 3 tablespoons Butter
  • 1 tablespoon Butter or oil (for greasing the griddle)

Directions

Step 1

In a large mixing bowl, sift together the all-purpose flour, baking powder, salt, and sugar.

Step 2

In a separate smaller bowl, crack the eggs and beat them lightly. Add the sweet milk and stir until well combined.

Step 3

Melt the butter and let it cool slightly. Stir it into the milk and egg mixture.

Step 4

Gradually pour the wet mixture into the dry ingredients, stirring just until the batter is smooth. Avoid overmixing to ensure light and fluffy griddle cakes.

Step 5

Heat a griddle or large skillet over medium heat. Grease lightly with butter or oil once hot, using care not to over-grease as this can cause the cakes to cook unevenly.

Step 6

Ladle about 1/4 cup of the batter onto the griddle for each cake. Spread slightly with the back of the ladle if necessary.

Step 7

Cook until bubbles form on the surface and the edges start to look set, approximately 2-3 minutes. Flip gently with a spatula and cook the other side until golden brown, about 1-2 minutes more.

Step 8

Remove the cooked griddle cakes and keep them warm by covering them with a clean kitchen towel. Repeat the process with the remaining batter.

Step 9

Serve warm with your choice of toppings such as syrup, butter, fresh fruit, or jam.
