Ingredients

  • 200 grams spaghetti or rice noodles
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 medium carrot, julienned
  • 1 medium red bell pepper, thinly sliced
  • 2 stalks green onion, chopped
  • 1 tablespoon toasted sesame seeds
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons water

Directions

Step 1

Bring a pot of salted water to a boil. Cook the noodles according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

Step 2

In a small bowl, whisk together the soy sauce, honey, sesame oil, rice vinegar, and water. Set the sauce aside.

Step 3

Heat a large skillet or wok over medium heat. Add a splash of sesame oil and sauté the minced garlic for about 30 seconds until fragrant.

Step 4

Add the julienned carrot and sliced red bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Step 5

Reduce the heat to low and pour the sauce into the skillet. Allow it to simmer for 1-2 minutes until slightly thickened.

Step 6

Add the cooked noodles to the skillet and toss to coat evenly in the sauce. Sprinkle in the chopped green onions, toasted sesame seeds, and red pepper flakes if using.

Step 7

Remove from heat and allow the noodles to cool slightly before packing them into lunchboxes. Serve warm or cold as desired.
